IGADO (Pork Intestine)

  • 500 grams pork liver, sliced
  • 500 grams pork heart, sliced
  • 500 grams pork intestine, cleaned and sliced
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup water
  • 2 tbsp vegetable oil
  • 1 pc onion chopped
  • 4 cloves garlic minced
  • 2 pcs bay leaves
  • 1/2 tsp black pepper
  • pinch salt to taste


  • Heat the oil in a large pan or wok over medium heat.
  • Add the onion and garlic and sauté until the onion becomes translucent.
  • Add the pork liver, heart, and intestine and stir-fry for 5 minutes or until the meat is browned.
  • Pour in the soy sauce, vinegar, and water. Add the bay leaves and black pepper. Mix well.
  • Bring to a boil and then reduce the heat to low. Cover the pan and let it simmer for 1 hour or until the meat is tender.
  • Add salt to taste.
  • Serve hot with steamed rice.
