IGADO (Pork Intestine)
Ingredients
- 500 grams pork liver, sliced
- 500 grams pork heart, sliced
- 500 grams pork intestine, cleaned and sliced
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 cup water
- 2 tbsp vegetable oil
- 1 pc onion chopped
- 4 cloves garlic minced
- 2 pcs bay leaves
- 1/2 tsp black pepper
- pinch salt to taste
Instructions
- Heat the oil in a large pan or wok over medium heat.
- Add the onion and garlic and sauté until the onion becomes translucent.
- Add the pork liver, heart, and intestine and stir-fry for 5 minutes or until the meat is browned.
- Pour in the soy sauce, vinegar, and water. Add the bay leaves and black pepper. Mix well.
- Bring to a boil and then reduce the heat to low. Cover the pan and let it simmer for 1 hour or until the meat is tender.
- Add salt to taste.
- Serve hot with steamed rice.
